Wine Making

The Farmstead of Podere l’Aione began life in 2002 with the purchase and restoration of an ancient property but one that had suffered a long period of neglect.

We brought back together areas of land that had been split up over the years but that were historically part of the same settlement of Aione.  The fields had been used mainly to grow cereal crops and rear cattle.

Right from the outset we believed that the land’s unique exposure and its height, 500 metres above sea level, could help produce wines that were especially rich in fragrance and aromas and, taking risks like pioneers, we planted about 4 hectares of vines here, mainly with Sangiovese but also Alicante, Cabernet Sauvignon and part with white Vermentino and Aromatic Traminer grapes.

The vines are all planted to a layout of 2.7 x 0.8 metres and with a spurred cordon training system.  Grape production is controlled by thinning out the bunches to achieve balanced and healthy grapes that can bring to the wine all the elements that are abundant in the soil.

The winery processes are carried out with meticulous hygiene controls and the limited quantities mean that wine-making techniques can be technically up-to-date while still using traditional methods.

This is a young company, motivated by the fervent desire to produce something that is representative of the effort and enthusiasm we devote to our land.
